Our Favorite Oatmeal Walnut Cookies for a Delightful Christmas Treat

This oatmeal walnut cookie recipe was given to me by my aunt Julie. She makes tins and tins of them every year for Christmas. They are the first of all the desserts to be eaten and these gems are what everyone asks to take home when the evening’s revelry is done. Of course, these cookies can be savored all year round. They are especially delicious with your morning coffee or tea. Enjoy!

Ingredients:

  • 1 3/4 cups sifted Flour
  • 3/4 teaspoon Baking Soda
  • 1 cup soft Shortening
  • 1 1/2 cups Dark Brown Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon ground Cloves
  • 1/2 teaspoon Vanilla
  • 1/4 cup Sour Milk or Buttermilk
  • 2 Eggs, unbeaten
  • 1 1/2 cups uncooked Oatmeal
  • 1 cup Walnuts, chopped

Instructions:

Heat oven to 375 degrees F*.

In a medium bowl combine flour and baking soda.

Cut in shortening until evenly distributed.

Add brown sugar and mix.

Add salt, cinnamon, ground cloves, vanilla, sour milk, eggs, and oatmeal. Stir until mixed.

Add walnuts and stir briefly to mix.

Spoon dollops of dough onto an ungreased cookie sheet.

Bake on the middle rack for 10-12* minutes.

Remove from oven and move cookies to aluminum foil to cool.

*For higher altitudes heat oven to 390 degrees F and bake for 7-8 minutes.

The secret for soft oatmeal walnut cookies

For soft cookies that have not been overcooked, take them out of the oven when they are not 100% cooked on the top. The cookies will be mostly cooked, but with a bit of gloss in the center. They should have holes from popped gas bubbles, just like when you make pancakes!

This may sound strange, but it works every time. The reason it works is that food continues to cook for a short time after you remove it from the heat source. So if you take the cookies out of the oven when they are completely cooked, they will overcook on the countertop when you take them out.

This is a delicate dance. You don’t want undercooked cookies, so watch them closely near the end of the cooking time. Also, every oven is a bit different, so test it out and see what works for you.
